We partner with small-scale farmers across southern Lebanon to source natural, free-range, and responsibly grown ingredients. Our work supports rural livelihoods while preserving the integrity of the land.

Slow-Reduced Artisan Jams

Our jams are crafted using a unique slow-reduction process that can take up to 10 days. The fruit is gently heated to around 65°C, then allowed to cool naturally before being slowly reheated again. This careful cycle continues until the perfect moisture level and natural concentration are achieved.

This slow method preserves the fruit’s natural vitamins, nutrients, and vibrant flavor, creating jams that taste closer to fresh fruit than traditional preserves.

At Dry & Raw, we also use about half the sugar typically found in conventional jams, allowing the fruit to shine while creating a lighter, more wholesome spread — rich in flavor and almost guilt-free.

Free-Range Milk, Authentic Character

Our goat and sheep cheeses are crafted using free-range milk sourced from small farms in southern Lebanon and the West Bekaa. Grazing on natural pastures, these animals produce milk that is richer, more aromatic, and full of character. This exceptional raw ingredient gives our cheeses their depth of flavor, creamy texture, and authentic terroir. At Dry & Raw, extraordinary cheese begins with extraordinary milk.
